I have an Early 2008 Mac Pro as well and about 1.5 years ago I installed the Mac version of an nVidia 285GTX video card in my Mac Pro. The installation was straightforward and easy. This card is still available from a top-rated seller on eBay (just checked to be sure of this) and it is a fantastic video card. I use Aperture a lot as well as Photoshop. This video card shines there but where it realy shines is video editing with Final Cut Pro X or Adobe's Premiere Pro CS5 or CS5.5 which are able to use the CUDA of this card to accelerate rendering and playback.

I have my hands on a 2008 Mac Pro. It is running 2x Xeon E6452s (that I may be upgrading to X5492s) and 24Gb of Ram. However the Graphics card in it is an old 4870. Now Mac Pros can use most Modern Nvidia cards without any need to mess with the firmware on the card. So I am trying to decide which card would be best matched to the processors. I highly recommend this video card which has been totoally trouble free for me and worth every penny of its cost. Clarify: you bought an Apple 5870.

As for Windows, you should be fine, with one caveat: before installing or using a new different brand, though Windows 7 is less of an issue, you should uninstall and remove the other when switting from GTX Nvidia to ATI. Once you do that Windows should be fine. Best mac osx emulator for windows 7.
